Introduction

These cookies are the perfect fuel before a workout.

Ingredients

1/4 cup whole wheat flour
3/4 cup Quaker Old Fashioned Oats
1/4 cup ground flaxseed meal
1/4 cup brown sugar
1/4 cup raisins
1/2 teaspoon ground cinnamon
6 ounces plain Greek yogurt
1/8 cup canola oil

Directions

From author Tina Haupert:
These cookies are the perfect fuel before a workout. They provide healthy carbohydrates with a little bit of low-fat protein for staying power. They’re also delicious—almost like eating a regular cookie!
--
Preheat the oven to 375°F. Coat a 12-cup muffin pan with nonstick cooking spray.

In a large bowl, combine all the ingredients and mix well.

Divide the batter evenly among the muffin cups (they will be only about 1/3 full). Bake for 12 to 15 minutes, or until golden brown.
