Summer Salad with Chicken & Berries
Introduction
When berries are in season and bursting with flavor, move them beyond sweet dishes. Here, they shine in a filling salad.
Ingredients
3 cups mixed salad greens
2 tablespoons vinaigrette (bottled or homemade)
3 ounces chopped cooked chicken breast
1/4 cup chopped red bell pepper (or red onion), finely chopped (added for crunch--celery would also be good)
1/4 cup berries (we used raspberries and blackberries)
1/4 ounce pecans or walnuts (about 5-6 nuts)

Directions
Toss the greens with the dressing in a large bowl. Top with remaining ingredients and serve.
