Introduction

A clean, diet version of macaroons!

Ingredients

olive oil cooking spray
10 egg whites
2 cups unsweetened dried shredded coconut
2 cup rolled oats
1 tbsp vanilla extract
3/4 cup sucanat
1/2 tsp salt
2 tbsp bittersweet dark chocolate
1 tsp butter or heart-healthy margarine

Directions

heat oven to 350 degrees F

spray baking sheets with cooking spray; set aside.

stir egg whites, coconut, oats, vanilla, sucanat and salt in a bowl until well blended

drop tbsps of dough on baking sheet half inch apart.

bake macaroons until light golden, 12 to 15 minutes.

place chocolate and butter in microwave safe bowl and microwave to let mixture melt.

dip a metal spoon into warmed chocolate and gently drizzle chocolate over cookies.

cook completely, store in an airtight container in a cool dry place.

makes 40 macaroons
