Creepy Halloween Finger Cookies
Introduction
Turn low-cal sugar cookies into a Halloween treat!
Ingredients
1 cup heart-healthy margarine
1-1/2 cups white sugar (or sugar substitute)
1/2 cup egg beaters
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
48 almonds

Directions
1. In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time, then stir in the vanilla and lemon extracts. Combine the flour, baking powder, and salt; gradually blend into the creamed mixture to form a soft dough. Cover or wrap dough, and refrigerate overnight.
2. Preheat the oven to 400 degrees F (200 degrees C). On a floured surface, roll the dough out 1/4 inch thick. Slice into strips and roll between your hands to form finger shapes. Press an almond into the end of each cookie. Place cookies 2 inches apart on ungreased cookie sheets.
3. Bake for 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks.
Makes 48 servings (1 serving = 1 cookie).
