Introduction

These deliciously healthy muffins are full of wholesome ingredients and sweetened with honey!

Ingredients

2 cups whole-wheat pastry flour
2 teaspoons baking soda
2 egg whites
1/2 cup honey
1/4 cup safflower oil
3/4 cup milk (almond, soy, rice or cow)
1/2 cup unsweetened applesauce
2 medium apples, peeled and chopped
2 teaspoons cinnamon

Directions

1. Preheat oven to 350 degrees F.
2. Mix flour, cinnamon, apples and baking soda in a bowl.
3. Whisk together egg whites, honey, oil, milk and apple sauce in another bowl.
4. Pour the dry ingredients into the wet ingredients and mix well.
5. Spoon mixture into lined muffin tins and bake for 15-20 minutes.
