Grilled Fillets on a Bed of Mushrooms and Spinach from Gorton's®

Introduction
This quick dinner is full of protein and easy on the waistline. Not to mention, it's pretty tasty.
Ingredients
2 Gorton's® All Natural Lemon Butter Grilled Fillets
2 Tbsp butter or margarine
1 small onion, chopped
1/2 cup mushrooms, sliced
1 clove garlic, minced
1 (10 ounce) package baby spinach
1/4 tsp pepper
2 Tbsp butter or margarine

Directions
1. Prepare Gorton's All Natural Lemon Butter Grilled Fillets according to package directions.
2. In the meantime, melt butter in a large non-stick skillet over medium heat for 2 minutes, sauté onion, garlic and mushrooms 5 minutes, add spinach, pepper, sauté 5 more minutes, place cooked fillets over spinach mixture and serve immediately.
Serving Size: 1 fillet with 1/2 cup cooked vegetables
