Sausage Egg Casserole (Low Carb)
Introduction
This simple, filling casserole is certain to be your new favorite breakfast. You can also turn it into mini muffins.
Ingredients
12 ounces breakfast sausage (reduced sodium or low fat preferred), browned
12 large eggs
1/4 cup skim milk
2 c shredded low-fat Cheddar cheese
1/4 t pepper

Directions
Preheat oven to 375*F.
Mix all ingredients together and pour into a greased casserole dish.
OR
Spray a 12 cup muffin pan and fill each muffin cup evenly.
Bake for 30 minutes. Cool for 5 minutes and serve. Makes 12 servings.
