Introduction

This sweet and spicy salsa is great on tortilla chips or with your favorite grilled meat. Tastes like summer!

Ingredients

2 large ripe red tomatoes, finely diced
2 large ripe but firm peaches, finely diced
1 mango, finely diced
2 tbsp fresh cilantro, chopped
1/2 yellow bell pepper, diced
1/2 large onion, diced
1 jalapeno pepper, minced
1 tsp ground cayenne pepper (optional- add more or less to preferred spiciness)
Juice of 1 large lime

Directions

Combine all of the prepared ingredients in a large bowl, refrigerate for at least one hour for the flavors mix. The ground cayenne pepper is optional -- add it if you would like a hotter salsa.

I like to serve it with blue corn tortilla chips, although it is also delicious with grilled meats and fish.

Makes 12-16 servings of 1/2 cup.
