Introduction

These seasonal waffles are easy to make and are packed with protein and fiber. The perfect fall or winter breakfast!

Ingredients

1 cup whole wheat pastry flour
1.5 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
2 organic eggs
2 Tbsp organic cane sugar (or brown sugar)
1/2 cup pumpkin puree (fresh or canned)
1 medium apple of choice, finely chopped and divided

Directions

Preheat waffle iron.

Combine flour, baking powder, nutmeg and cinnamon in a small bowl.

In a separate bowl, mix eggs with sugar. Add to the dry mixture (note that the mixture will be very dry at this stage). Fold in the pumpkin and half of the chopped apple until well combined into a thick, moist batter.

Add batter to waffle iron--about 1/4 cup batter per 4-inch waffle--and cook until done. Garnish cooked waffles with the remaining apple and top with real maple syrup. Enjoy!

Makes about six 4-inch waffles. Serving = 2 Waffles.
