Introduction

Eat as a side salad or add two grilled scallops and a slice of grilled whole-grain bread for a meal!

Ingredients

Vinaigrette
juice of half a large grapefruit
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
2 tablespoons olive oil

Salad
2 tablespoons sliced almonds, toasted
1/2 red onion, sliced thin
10 cups mixed baby greens
2 1/2 grapefruits, segmented

Directions

Place the vinegar, and mustard in your salad bowl, then slowly whisk in the oil.

Place the salad ingredients in the bowl, then toss to combine. Serve immediately.
