Introduction

If you love fajitas, but are watching your sodium intake, try this salt-free rub! It lends a complex flavor to meat without the high sodium counts traditionally found in Mexican dishes.

Ingredients

1 teaspoon ancho chili powder*
1 teaspoon cumin seed
1/2 teaspoon oregano
1/4 teaspoon red pepper flakes
1/2 teaspoon garlic powder or dried garlic

* or your favorite chili powder


Directions

Combine all ingredients in clean coffee grinder or blender. Pour into a glass jar or covered container. Store in a cool, dry place away from light for up to six months.

Yields 1 batch.

Big-Batch Measurements:
4 teaspoons ancho chili powder*
4 teaspoons cumin seed
2 teaspoons oregano
1 teaspoon red pepper flakes
2 teaspoons garlic powder or dried garlic
(Makes 4 batches.)
