Introduction

Delicious and easy, this salad combines all of your favorite sushi ingredients in one bowl!

Ingredients

Salad:
1 package UNCLE BEN'S® READY RICE® Whole Grain Brown
12 ounces cooked shrimp (about 30 medium shrimp)
1 English (seedless) cucumber, thinly sliced
1 ripe avocado, diced
1 cup shredded carrots
3 tablespoons pickled ginger, chopped (available in the Asian section of most supermarkets)

1/4 cup bottled sesame-ginger dressing


Garnishes:
1 T sesame seeds
1 small package toasted nori (seaweed), crumbled

Directions

Prepare the UNCLE BEN'S® READY RICE® Whole Grain Brown Rice according to package directions.
Divide the cooked rice among four large bowls. Top with the shrimp, avocado, cucumber, carrot and ginger. Drizzle dressing over salads, then top with sesame seeds and nori.

Serves 4: 1/2 cup rice, about 1 cup veggies, and 3 ounces shrimp
