Introduction

This dish is our family's favorite and is different than the traditional marshmallow-topped recipe.

Ingredients

4 medium sized yams or sweet potatoes (to yield 4 cups)
1 cup orange juice
2 T orange zest
1/3 cup brown sugar
1 T cornstarch
pinch of salt
3 T butter
Rosemary, if desired

Directions

Cut yams in quarters. Cook at a slow boil until fork tender (with skins on). Drain and remove skins. Place cut side down in casserole dish.

Melt butter in saucepan on stove. Add dry ingredients. Whisk in orange juice and cook on medium high until slightly thickened. Pour over yams.

Bake in 350 oven for 50 minutes.
