Easy & Cheap Corned Beef Hash
Introduction
This is a simple recipe for corned beef hash. Since you use the canned corned beef, it's a very inexpensive, quick meal to throw together.
Ingredients
1 can Libby's corned beef
1/4 cup onions, chopped (any variety)
3 medium potatoes, cut into chunks
1/2 cup skim milk
2 tbsp butter
salt & pepper to taste

Directions
Cut potatoes into chunks and put in a medium sized saucepot. Cover with cold water, lid, and bring to a boil. Once boiling add salt if desired. Cook until fork tender, then drain. Once drained, add butter, milk, and salt & pepper to taste. Mash to desired consistency.
While the potatoes are cooking, add 1 can of corned beef to a skillet over medium heat. Once the meat starts to heat up, add the onions and cook for 5-10 minutes, until the onions become softer and meat looks like it's been cooked.
Combine the meat and potatoes and mix together. Serve hot. Steamed vegetables or a salad would be a nice side dish with this meal.
