Introduction

Smoky and creamy grilled avocados filled with salsa and crumbled Mexican cheese turn any meal into a fiesta.

Ingredients

1 T lime juice
1 t olive oil
2 ripe avocados, sliced in half lengthwise, pit removed
salt and pepper to taste
1/4 cup fresh salsa
1 ounce part-skim queso fresco (or any soft white Mexican cheese), crumbled
1 T chopped cilantro

Directions

Preheat a grill or grill pan over medium-high heat.
Combine the lime juice and olive oil in a small bowl. Brush the mixture on the cut sides of all four avocado halves. Season the avocados with salt and pepper.
Place flesh down on the hot grill and cook 5-7 minutes, until the flesh has grill marks.
Remove from grill.
Fill each avocado half with 1 tablespoon salsa and cheese, then garnish with cilantro.
Serve immediately.
