Introduction

I altered my favorite chocolate muffins to be practically fat free and low calorie. Moist and chocolatey! Only 109 cals and 2.5 g of fat for a large muffin, or per slice (12 a loaf)

Ingredients

2 c shredded zucchini
1 1/2 c whole wheat flour
1/2 c cocoa
3/4 c sugar subsitute of your choice
1 1/4 tsp b. soda
1/2 tsp salt
1 tsp cinnamon
1/2 c fat free yogurt
4 egg whites
1 tsp vanilla
1/3 c mini chocolate chips

Directions


In separate bowl, combine all dry ingredients.
Combine yogurt, egg whites, and vanilla; add to zucchini.
Gently mix dry and wet ingredients together until moistened.
Use 1/4 c to pour into 12 muffin cups.
Sprinkle chocolate chips over tops.
Cook at 350 degrees for 15-20 min.
