Introduction

Crunchy almonds, creamy avocado, and crisp arugula pair perfectly with smooth and sweet mango in this simple salad.

Ingredients

2 T lime juice
1 T chopped cilantro
pinch salt and pepper
1 T grapeseed oil
4 cups arugula or spinach
1 mango, peeled, pit removed and sliced (WATCH: How to Cut a Mango)
1 avocado, pit removed and sliced (WATCH: How to Slice an Avocado)
1/4 cup whole or sliced almonds

Directions

Combine the lime juice, cilantro, and salt and pepper together in a small bowl, then whisk in the oil.
Toss half of the dressing with the greens and reserve the other half for serving.
Divide the greens among four bowls, then top with 1/4 the mango and avocado, plus 1 T almonds.
Drizzle with the remaining dressing and serve immediately.
