Whole Grain Waffles with Fruit from Daisy Brand®
Introduction
Whole-grain breakfast goodness!
Ingredients
1 cup sliced strawberries
1/2 cup blueberries
1 small banana, sliced
2 tablespoons canola oil divided usage
1 1/4 cup whole wheat flour
1/2 cup quick-cooking oats
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup skim milk
3/4 cup Daisy Low Fat Cottage Cheese
2 eggs
1/2 cup blueberries

1/4 teaspoon baking soda
1/4 teaspoon salt

3/4 cup Daisy Low Fat Cottage Cheese

Directions
Step 1 In a medium bowl, stir together the strawberries, blueberries, and banana. Set aside.
Step 2 Heat a waffle iron. Grease the iron with 1 tablespoon canola oil.
Step 3 In a large bowl, stir together the flour, oats, sugar, baking powder, baking soda and salt; set aside.
Step 4 Blend the milk, cottage cheese, 1 tablespoon canola oil and eggs in a blender or food processor.
Step 5 Stir the milk mixture into the flour mixture until moistened (the batter will be lumpy).
Step 6 Pour the batter onto the center of the hot waffle iron (check manufacturer’s directions on amount of batter to use). Close the lid of the waffle iron. Bake for 3 to 5 minutes or until the steaming stops. Carefully remove the waffle.
Step 7 Repeat with remaining batter.
Step 8 Divide onto four plates and serve with .75 cup fruit.
